We understand that not everyone is fully familiar with the breakdown of animals when it comes to meat processing. To help with this, we have designed our “House Special” Cut Sheet which includes a wide variety of the most popular pork cuts.
We have both a mild and hot mixture for the sausage. The mild blend focuses more on the sage flavor while the hot has more of a spicier taste. Our sausage recipes were tried and perfected for about a year to ensure that each pack has a fresh, homemade taste.
If you prefer to slice your own tenderloin, or if you prefer tenderloin roasts, we can pack the tenderloin whole or sections of the tenderloin.
For those of you who prefer sliced tenderloin over whole tenderloin, we will pre slice it to the thickness of your choosing.
Whole Pork Belly
For those of you who like to cure or smoke your own bacon, we will leave the pork belly whole and fresh for you to do your own custom smoking and curing.
For anyone wanted to cure their own ham, we can leave the ham fresh for pick up.
